Vegetarian Test Kitchen - Spinach-Pesto Pasta with Roasted Red Peppers and Ricotta

Three weeks and three vegetarian meals, sup New Year's Resolutions? This week marks another week of comfort food, and we'll take any chance to make use of Kerry's food processor. Pesto, while typically reserved for spring and summertime actually makes for a wonderful winter meal. Especially when you add more garlic than the recipe calls for (yeah your breath might smell later, but it's totally worth it).  Clocking in at under 30 minutes, it's the perfect weeknight meal solution!




Spinach was definitely a nice additive to the recipe and we like our sauce a little grittier, so feel free to pulsate the pesto mixture more if you like your sauce to be smoother.

One of the things that caught our eye about this recipe was the roasted red pepper, what an amazing addition to your standard pesto pasta dish. 






A dollop of cheese always makes a good meal great.
